About Us
Small-batch coffee, roasted in Cortland, Ohio
Third Day Coffee Roasters has been roasting specialty coffee in Cortland, Ohio since 2019. It started on a back porch with a hot air popcorn popper and a bag of green beans. Joe has a technical background and researches everything, so the hobby grew into a one-pound electric roaster and a lot of free coffee for friends. He couldn't find coffee that tasted the same every time he bought it, so he started roasting his own.
Why "Third Day"
Freshly roasted coffee needs to rest and release CO2 before it's at its best. Roasters debate the timing, but we've found the third day is when a coffee is ready: rested enough to bag and full of flavor. We're also a faith-based business, and Christ rose on the third day. Put those together and the name was an easy choice.
How we roast
We roast in small batches and buy as close to the farmer as we can, including Fair Trade and organic coffees. Every roast is logged and graphed: time, temperature and rate of rise. Once a coffee's profile is dialed in, we stick with it, so the bag you buy six months from now tastes like the one you buy today. When a new lot of a familiar coffee arrives, we check the first roasts against the last, and if a batch isn't right, it doesn't ship.

Meet the roaster

Joe Ezzo, owner and roaster. Joe grew up a few miles from Cortland and lives here today. He'll admit to a perfectionist streak, and he drinks the batches that don't make the cut. When he travels, the first stop is the local roasters, to taste what they're doing and make sure Third Day keeps measuring up.
